azteca is not life-changing, but it is a decent option. they can say that many of the items are skillful, but the products themselves are fresh. the menu has a section called “vegi-mex” with a clearly marked vegan dish while the others can be modified. the employees usually understand the word “vegan”, but I usually modify it to be clear. the Mexican rice has chicken stock, and the roasted beans are not vegan. you will forget that chicken stock is not vegan (especially in mill creek where the word vegan hardly exists) so be careful. the fried beans that are vegan, vary by location as I know someone who works at the location mountlake terrance, and they verified that they are vegan, but they also know that every location makes them different. I do not go out of my way to have azteca, but it is a decent option, especially compared to the other great Mexican restaurant in the opposite, “La Palmara”, which does not label vegan products. there are better options in mill creek, but if they are with non-veg people and all want to make happy, this is a good option.
