Sometimes the location of a restaurant does not matter. Bouillon Bilk is located on a seedy side street downtown; but just ignore that. Once you enter the restaurant, you are in a world of refinement and grace. The food is consistently of the highest quality, the presentation gorgeous, the cocktails and wine superb, and the seating comfortable and conducive to intimate conversations. Each dish is clearly the product of a great deal of thoughtful creativity. If you are not too hungry or in a hurry, go with the regular menu; however, if you are up for a culinary adventure, definitely get the tasting menu. The seasoning on everything is perfect, with some surprising flavor combinations, for example the lamb, which astonished with every bite. Some of the dishes appear a bit risky at first, like the squab with blackcurrant and cucumber—the flavors were all over the place, but I felt like I was devouring a work of art. As Nina said, “There are tastes here you don’t want to stop tasting.” Oh, and my appreciation to whoever arranged the music, which is excellent as well.

While vacationing in Montreal we had one goal, great food and we found it here! I highly recommend the 8 course tasting menu with wine pairings. The food was delicious with beautiful presentations. The staff were attentive, friendly, and knowledgeable. I was still dreaming of the walleye dish the next day and the lobster linguine was delicious! Would love to go back the next time we are in Montreal.
My boyfriend and I had the pleasure of experiencing the 8 course tasting menu with wine pairing, which was a complete seduction of the senses, for a Tuesday date night. Each dish played an important part in the overall connected theme of the menu, and progressed in a three and a half hour service highlighted by thoughtful cocktails and wines. Particular favourites included an exquisite lobster and bisque, lamb and chanterelles, and Alaskan bomb. Magical plating with a flare towards playful, which I found to be very whimsical. Extra love for the amazing latte at the end of the night, long after they had closed, which was certainly the best I've had in any restaurant in Montreal. Cheers to Julien and Gabriel, who imparted many important details of their wine and food knowledge with us, and who were a pleasure to share the evening with at our seating au comptoir. As members of the industry and local foodies, we were blown away. Would return anytime.
We arrived a few minutes early in this incredibly busy and noisy restaurant. Very first impression was therefore not welcoming, however the hostess took extremely great care of us, bringing us two chairs whilst we waited. Before we even had time to order drinks, our table was ready. We had the most delightful waitress who explained the interesting and innovative dishes on the menu, to perfection. Our meals were simply outstanding: my wife had the hamashi salad and I had the foie gras followed by the pétoncles (scallops) for my wife and the aubergine for me.We rounded up with an impressive Quebec cheese selection. Everything was rich in flavours and beautifully presented. I definitely recommend this restaurant for true connoisseurs!
Une expérience merveilleuse! Un service impeccable! Notre serveur était très gentil. Ma soeur a beaucoup de restrictions alimentaires et notre serveur à fait des pieds et des mains pour qu'elle ait une superbe expérience. La chef a concocté un dessert spécial qui n'était pas sur le menu. Nous nous sommes senties très bien accueillies. Nous recommandons cet endroit à tous.
BB is a must. An outstanding restaurant in a modern industrial setting. The 5 course tasting menu was smashing. This is one great restaurant - I would recommend it highly.

On holiday in Montreal, we had two meals at this fabulous restaurant. Both meals found us seated at the bar which was very comfortable and also interesting to watch the action. The bar staff engaged in conversation, giving us information about the food, suggesting wines to pair with the food. The food was delicious and we tried items for the first time such as Duck Tartare and Hamachi, decorated with the tiniest of edible white flowers. I wish I could remember the names of staff, but I can't. On our second visit ( August 2nd) both bar staff ( male) were fabulous and the attention and friendliness from the person-in-charge (female) made the evening very special. In addition, another staff member (waiter tonight but on our previous visit, a fabulous bar staff too) came cross to say hello and to ask how our holiday had been. He makes a delicious 'gin and tonic' with homemade tonic water!If we lived in Montreal, this would be our regular dining spot. It is a wonderful place and I cannot recommend it highly enough.
