Sometimes the location of a restaurant does not matter. Bouillon Bilk is located on a seedy side street downtown; but just ignore that. Once you enter the restaurant, you are in a world of refinement and grace. The food is consistently of the highest quality, the presentation gorgeous, the cocktails and wine superb, and the seating comfortable and conducive to intimate conversations. Each dish is clearly the product of a great deal of thoughtful creativity. If you are not too hungry or in a hurry, go with the regular menu; however, if you are up for a culinary adventure, definitely get the tasting menu. The seasoning on everything is perfect, with some surprising flavor combinations, for example the lamb, which astonished with every bite. Some of the dishes appear a bit risky at first, like the squab with blackcurrant and cucumber—the flavors were all over the place, but I felt like I was devouring a work of art. As Nina said, “There are tastes here you don’t want to stop tasting.” Oh, and my appreciation to whoever arranged the music, which is excellent as well.
